I wrote a few weeks ago on how the microwave kills our crucial B12 vitamins.  I wanted to touch a little more on this topic and use it in my Contributor post on Happy Mothering.  All parents should understand the dangers of use the microwave.  Yes, it is convenient, but at what cost?

Running for a Half Marathon week 1


This week was a little tough for me.  I had a few set backs with temperature rises and the kids schedules.  This is what make a goal is all about though.  We have obstacles and we do our best.  On Tuesday I thought is would be nice to run after I took my daughter to school.  This way I did not have to run while pushing her.  This was a huge mistake.  The temperatures reached 95 and it was an exhausting run.  Because of the heat, I would have had a better run in the cooler morning temps and still pushing Gabby.

Monday: P90X Cardio
Tuesday:3 miles
Wednesday: P90X Kenpo
Thursday: run 3.5 miles
Friday: P90X Yoga
Sat: 5 miles....did not run
Sunday: P90X Yoga

This week I am continuing to drink my NewGreens Shake for breakfast.  This is a vitamin loaded shake that is super ease.  One thing I love about it is that it give me energy without leaving my stomach too heavy to work out.  You can see my review here.  Lunches and dinners where a great mix of vegan salads, soups, and raw foods.

A simple garden salad and mixed fruit, Right.  Some days I added nuts, seeds, and dried fruits to change it up.  Both salads are very filling, can be eaten single or mix and match.

For snacks I enjoyed the Raw Almond Balls or a cup of Yogurt with flax seed.
I would usually make a big batch of the salads, and rotate them.  Also, think about adding a little something to each dish to keep it interesting.

Thursday:  run 3 miles
Friday: P90X Yoga
Sat:  6 miles
Sunday:  REST

Recipes for this week will be:  Black Eye Peas Curry, Pumpkin Pancakes, Green Curry Paste with vegetables, Indian rice, black bean tacos, mushrooms and onions, Chilean Salads, and a few inspirations.  Be sure to stop back for the recipe(s) of the day. 

Week 2, might be even more of a challenge since the kids are home for Fall break.  I am going to have to call on friends and get creative to continue my training.  Life is never perfectly neat, we have speed bumps and hiccups, but it is important to keep your eye on your goals and do you best to make them happen. 


Homemade Chicken Noddle Soup Recipe

Homemade Chicken Noddle Soup Recipe                         

1/2 pack of organic whole grain spaghetti noodles.
2 organic chicken breast, boiled
2 tbsp organic Better Than Bouillon
3 cups water

Boil the Chicken breast in 4 cups of water.  Once chicken in cooked set aside to shred, keep chicken stock aside.   I broke my spaghetti pasta into 1 inch piece and then boiled.  Once boiled you can drain and add noodles to the chicken stock.  Shred chicken and add back to chicken stock.  I then add 2 tbsp of better than bouillon.  Stir and let sit for another 10 minutes.  If you like your chicken noodle soup thinner, than add more water. 

I love to add carrots, celery, and thyme to my soup.  The kids wanted it Campbell Style so this is what we did.  The next day I boiled carrots, celery and thyme until cooked and add the vegetables to the soup for extra vitamins and color.

Dr Leonard Coldwell speaks about why GMO is toxic!


GMO News is very important to me, because I do not think everyone understands the problem.  Most Americans know the consequences of bad food choices.  Now we are trying to eat healthier foods and we have a ton of fad diets.  We have started to read labels, count calories, and ingredients.  Marketing has started to use terms like Natural, Wholesome, and Healthy even though they might not be.  We started to use Organic Certification to KNOW this is really an organic product.  Now we are trying to know "is this product GMO"? 

Why would you want to know if the item is GMO? Because it is a science experiment without all the trials finished until now!  The test trials to say if corn GMO seeds are safe was conducted for 90 days and then deemed safe.  Studies are now coming out with results of rats on feed on the corn having liver damage and cancers.  I am thinking that 90 days might not have been enough time to say that this product is safe.  

Dr. Leonard Coldwell talks about how GMO foods are toxic.  One point he speaks on is that during digestion our bodies can not digest the food, we don't have the fitting enzymes to do so.  When we eat a GMO food, our body see it as a mutation and tries to get rid of it.  We will keep attacking it with enzymes and energy to rid our bodies of it, and sometimes this goes on for hours, days, even weeks.  While the food is on our digestion it creates toxic gasses, rotting away.  He goes on to explain more but for me this is more reasoning for me to stay away form GMO foods.


 

He then talks about Monsanto and how they are bulling farmers to have to use their GMO seeds.  How they trapped Farmers to using their seeds, making it impossible to not use their seeds, and that one day they may be the only seeds producers taking over the worlds food supply!  I feel for our Farmers and say the bullying has to stop!

Something I thought he said that was very interesting was that with in 3-7 years of eating GMO foods we can possibly develop cancers.  He then mentions how we are in the highest era of cancer and terminal diseases.  If it did not exist 150 years ago, then lets not eat it.  Before the 1900's cancer rate was 7% and now it is close to 57%.  WOW!

Three Bean Salad Recipe

Three Bean Salad Recipe  

1/2 cup cooked black beans
1/2 cup cooked pinto beans
1/2 cup cooked garbanzo beans
1 head of raw broccoli florets,  chopped
1/4 cup sliced raw carrots
1 large stew raw tomato, chopped
1/2 red pepper, chopped
1 cucumber, quartered
1 raw zucchini, sliced in 1/8
3 leaves of green leaf lettuce chopped

I prefer to cook my beans instead of purchase in a can.  Usually if I am making this I will soak the beans in separate pots over night.  Then finish boiling until cooked through, the next day.  I add all the ingredients together and drizzle with Newman Own Organic Italian Dressing.  Mix all ingredients and enjoy.  I love to have a few sliced of avocado on the side.  I do not mix the avocado into the main salad because it oxidizes to quickly and I make enough to eat on it all week.  Adding fresh avocado is a nice extra. 

This salad is loaded with great cleansing fiver for your digestive system.  When you eat vegetables raw you can really boost your vitamins and minerals, A, B's, folate acid,C, E, F, Calcium, Chlorine, and Potassium.

Raw Almond Balls Recipe

Raw Almond Balls Recipe
2 1/2 cups shredded coconut, unsweetened
1 cup almond butter
1/2 cup raw honey
1 cup raisins
2 tsp cinnamon
1 1/2 cups almonds, ground into meal
shredded coconut, unsweetened for coating balls.

Add first 6 ingredients in a mixing bowl.  Blend until all ingredients look combined.  Form into balls in your palm.  These can be same or large.  I personally like to make mine about 1 1/2 inch balls so they are single servings.  This way I don't just easily keep popping them in and forgetting to count them.  I am not counting calories, but no need to waste them.  :-)  after you form your balls then coat them with the extra coconut.  I keep pressing the coconut to the balls and reforming the ball shape over and over.  Then place in refrigerator until cold.  They store nicely in the frig for up to 10 days.  I froze half my batch for later.  When I took them out of the freezer they thawed nicely within 5 minutes and taste amazing still. 

This recipe comes from the Making Babies Book, by Shoshanna Easling.  She has so many wonderful recipes, herbal creations, and advice all in one amazing book.  While these recipes are especially helpful for a mom and dads trying to get pregnant, moms carrying babies, it is also great for those wanting healthy options. 
I find this to be a great source of protein, fiber, folate, good fats, and energy to power me back up after a hard run.  It taste like a cookie to me, but has all great ingredients that my body needs.  I love when a food taste like your cheating, but its totally good for you.
