Pumpkin Pancakes Recipe
1 1/2 cups whole wheat flour
1 cup pumpkin puree
1 tbsp cinnamon
1 tsp cloves
1 tsp pumpkin spice
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
6 eggs
1 cup 2 % milk
yogurt and fruit for topping
In a large mixing bowl place all ingredients in mix. I like to make sure that my mixture is liquid enough run easy off the beater. Pour into medium circles. Makes 20 medium pancakes. These where so delicious the kids called them festive and divine. Use some organic vanilla yogurt, fresh fruit, and dive in!
To make the perfect pancake you pour into medium size circles. Wait for little bubbles form on the surface and then flip. Let the pancake site for about half a minute and then take off the grittle. Pancakes have a beautiful orange brown color. Taste is fall and spice in every bite.
I like to use yogurt on my pancakes with some beautiful fresh fruit. These still taste amazing with maple syrup, according to the kids.
