Tropical Yogurt Good Eatin' Hop


Today's recipe is super easy and delicious.

Tropical Yogurt                                                                
1/2 cup of Vanilla Fat Free Organic Yogurt
1/4 cup of chopped organic mango
2 tbsp. raw organic coconut flakes
 
 
Whether you have for breakfast, snack, or a dessert this is a tasty healthy choice for 2013.

Cranberry Almond Upside Down Bars Gluten Free

Cranberry Almond Upside down Bars (Gluten Free)
 
4 tbsp unsalted butter, softened
12 ounce bag fresh cranberries
¼ cup of raw honey
2 cups raw almonds, toasted, and ground in processor
½ tsp of baking soda
½ tsp coarse sea salt
3 large free range eggs
1 tsp pure vanilla extract
 
Preheat oven to 250. Lightly brush the sides of your 3by 6 loaf pans. I made three loafs with ingredients above.

In a small sauce pan, heat cranberries over medium heat with 2 tbsp of water. Once the berries
start to pop, and in 2 tbsp of honey, and mix again. Pour the cranberries evenly into the bottom of the
three loaf pans. Set aside.
 
In another bowl mix almond, baking soda, and salt. Set aside.
In another bowl add 4 tbsp of soften butter and ¼ cup of honey. Mix completely. Add in one egg at a time mixing until light and fluffy. Once all three eggs are in ad in vanilla and mix completely.
 


Add almond mixture and egg mixture and mix completely. Spoon our almond mixture over cranberry’s and smooth out without disturbing the cranberry’s as much as possible.
 





Bake for 30 minutes and allow cooling for 3 minutes. Then score sides to come away clean and then flip
loaf on to cooling rank. Once completely cooled, you can cut into bars.

Thanksgiving Sides With a Healthy Twist (Hop)

Happy Thanksgiving! 
 
I love this day and think it is about so much more than food.  It is a time to come together as friends and family and be truly thankful for our lives.  What a wonderful way to celebrate by cooking up some amazing, delicious, healthful food. 
 
While I am sure some will have the traditional dishes of Turkey, mashed potatoes, green bean casseroles, stuffing, I would like to add a few healthful dishes too.  I will be making a few raw and vegan dishes to keep my body balanced and not so much of a carb load.

Good Eatin' Recipe is Black Eye Peas Curry

This week I am featuring a healthy dish that has a lot of exploding taste for your health.  I love Indian food, and I am very lucky to have a friend who has taught me a lot about making Indian cuisine.  Indian food has many wonderful health benefits.  The spices that make the base of flavor help to aid digestion, aid circulation, and more.  While most people assume all Indian food is spicy, you can moderate that.  I typically make two dishes of the same dish.  One medium heat for the kids and myself and  HOT one for my spicy husband.

Black-Eye Peas Curry                                                              
1 1/2 cups dry Black-Eye Peas
1 medium yellow onion
1 garlic clove crushed
1 tsp chili powder
1 1/2 tsp salt
1 1/2 tsp ground coriander
1 1/2 tsp ground cumin
2/3 cup water
cilantro leaves, chopped for garnish
1 tbsp Lemon juice

This is one of my favorite dishes to make since it is a good source of Protein, Carbohydrates, Fiber, no fat, no cholesterol, rich in potassium, zinc, and iron.
Benefits of Indian spices: protects against cold, aids digestion, reduce anemia.

 Boil black eye peas until tender but not mushy.  Drain beans and set aside.
  In my Ozeri wok, I drizzle coconut oil and then add in onions.  Cook for 5-8 minutes stirring frequently until onions are a golden color. 
 Now add spices garlic, chili powder, salt, ground coriander, cumin, and stir mixture for 3-5 minutes.

This what the mixture will look like as you stir in the spices. 










Add in 2/3 cup of water, stir, and simmer until all water is evaporated. 

 

 






Add the black-eye peas to onion mixture and stir until combined.  










Serve Black-eye peas in a bowl, add lemon juice and cilantro for garnish.  This dish can be served hot or cold.
