Celebrating Earth Day all Month Long Green Tip #2

Green Tip #2
Greening Your Kitchen

Pack Lunches in Reusable Containers
The amount of packing used for lunches and meals on the go is upsetting.  Help us reduce by starting today to use only reusable containers like bento boxes, reusable sandwich bags, and reusable liquid containers.  These should be "BPA FREE" and I always recommend "Made in the USA".  Why not support Local?

This small step alone can make a HUGE difference in the environment.  You will be buying and throwing away less while saving money.  2012 was the year we made all our lunch packing green and clean.  If you are a large family, I recommend buying in small amounts to stock pile your lunch packing items.  You can start now for the next school year and your own Lunches.

To Go Ware Reduce Your Fork-Print Review

To-Go Ware RePEaT Bamboo Utensil Set with Recycled PET Carrycase. #ad

Reuseit does it Again!  I just love this company, no matter what I am looking for they usually have it.  This school year we took the pledge to only use reusable lunch packing materials, in other words we no longer used plastic baggies or anything needing to be "thrown away".

In celebration of Earth Day, Reuseit.com sent me one of their To-Go Ware bamboo sets.  For one I love the color of the recycled green carrying case, just beautiful!  The case and utensils are light and do not take up much room at all.  I can throw my case in my purse, hiking backpack, or lunch bags, really the options are limitless.  I was especially excited to try it out for our Friday Soup and Stations at church.  During Lent we attend a social gathering to eat soup and then walk through the Stations of the Cross remembering the day of Jesus' death and resurrection.  With our group we all reduce the amount of waste and work by bringing our own bowls, utensil's, and cups, while the soup, bread, and beverage is provided.  I loved using my To-GO Ware and loved how easy it was to clean.  I just hand washed my case and utensil and laid them out to dry.  The website said that I could use them in the dishwasher, but I want them to last for a long time, and washing only take a minute.

I plan on taking my hand ECO Friendly Bamboo utensils with me everywhere from hiking, camping, volunteering, and eating out!
No more plastics, No more waste.

Beanfields nonGMO Chips Review and Giveaway

I have been talk a lot about NonGMO products and lunches.  I am excited to tell you about one of my favorite chips company, Beanfields.  They are a part of the nonGMO project, vegan, and gluten free!  Not to mention they taste great!  I was sent these chips to try and see how the kids enjoyed them in their lunches.

"Welcome to Beanfields, where we do things a little differently. We believe great tasting snacks should also be good for you, good for our families, good for our farmers and good for the planet. To us it's all about nutritionally maximizing the calories we eat, without sacrificing taste. How do we do it? Beans!"~~Beanfields
These delicious chips are loaded with black beans, navy beans, and long grain rice.  We got to try all 5 chip varieties and I loved them all.  Growing up I was a huge Doritos fan, and so are my kids.  We hardly ever buy chips besides the Organic Corn chips from Costco.  Its nice to now have a variety to chose from.  Beanfields chips have twice as much protein and fiber as most tortilla chips.  I wanted to see how the kids like them, so I threw in a few for their lunches, and of course they loved them.  They have a great crunch and they are not an empty calorie food.

"Beanfields Snacks are farmed and made in the USA. They are gluten-free, cholesterol-free, trans fat-free, preservative-free and free of every one of the FDA's eight most common ingredients that trigger food allergies." ~~Beanfields
With most Americans experiencing a reaction to gluten, corn, wheat, and more this makes a great alternative snack that you can feel good about.  be sure to check out WHY BEANS to understand why these chips are set apart from most conventional chips.

I have to say that my personal favorite was the Pico De Gallo.  It had a ton of flavor that was great by it self and with our home made spicy salsa.  Yummy.  The next favorite for me was the Salt and Pepper.  The family really enjoyed these, and I enjoy that they were a healthier version of snack food for them.  Everything in moderation, but this is definitely a chip that everyone can enjoy, without and digestive setbacks.

I love that they proudly show the NonGMO label!!  I believe that all products should be listed as non GMO, or contains GMO.   You can see more of my posts on this important topic under GMO search.

To the right is a picnic we had before Gymnastic last week.  This is our ideas of FAST FOOD!  Great tasting, filling, loaded with protein and fiber.  The chips were the Beanfields Sea Salt, and the kids devoured them.

Awarded the Best of Show!!!  The Nacho chip is a Vegan answer to Doritos.

Kids lunches

There are quite a few reasons why I pack my children's lunch.  To start I like to balance what they eat for breakfast, lunch, and dinner.  If they have a higher protein breakfast I want to make sure we increase the fruit, vegetables, and grains for lunch and dinner.  If I know we are having a heavier carb at dinner, like spaghetti, than I increase the other foods for breakfast and lunch.  Its a balance always.  If I don't see what they are eating at lunch how can I help balance their meals?

Next is the Quality.  I know I buy certified organic foods.  I don't know what the selection is like at the school, is it conventional, canned, high fructose corn syrup, GMO?  I would not know and they do not disclose that information.

The amounts.  My children are not on any diet beside natural good live foods and they actually eat a lot.  They eat twice as much as I do, but it is all high fiber low calorie foods.  Fruits and vegetables are really low in calories so you can eat as much as you want and stay in a healthy weight.  Some of the lunch meals at the school I have counted to be between 2000-3000 calories in one meal.  YIKES, that is a lot of calories for the beefy nacho meal.

I can go on, but I wanted to briefly explain why packing our lunches is so important to us.  The obstacle with packed lunches is variety.  How many ways can you make a sandwich?  Quite a few but it is a challenge.  That is what every parent faces when making lunches keeping it fresh and kid friendly.  This is a challenge even for me.  We have been packing lunches for 5 years and I still get stuck in the traditional lunch ideas.

I have four kids lunches I pack, and my husbands.  Each child eats a little differently and I adjust their meals to them.  On the left my oldest daughter does not like to eat a full sandwich but likes lots of lettuce with her turkey.  On the right my daughter loves blueberries and I throw in a few for some extra antioxidants.  Kirsten does not like blueberries and I have to sneak them into her juices and shakes.  The pretzels and chocolate cookie are from Newmans Own Organics.  They have delicious organic snacks that I like to add to the kids lunches, occasionally.

I have all four in school now, and I miss them.  When they get home from school it is easy to say start your homework while I start dinner.  We have Gymnastics, guitar practices, choir, and after school group functions.  It is very easy to get caught up in all the activities and homework.  This is why the first thing I try to do is have tea and a snack ready.  This way we all unwind, we take turns talking about our day, and we listen to each other.  They may all be at the same school but they never seem to cross paths.  Talking and allowing them to unwind is so important even for just 30 minutes.  I love these conversation ideas, and will be using a few.

FunBites Review and Upcoming Giveaway

I had a lot of fun with my FunBites mold.  I got the chance to review the green square.  As you know I think are food choices make a big difference in our energy, moods, and concentration.   That is why I like to send the kids off right to be prepared for school and all that comes up.  Packing their lunches are a big priory as well.  I usually spend about 40 minutes in the morning making breakfast and packing lunches for 6.  Yes, that includes Mom and Dad in having a healthy breakfast and lunch.

Every parent that packs a lunch for yourself and your kids knows that the variety sometimes gets stagnant.  Presentation can play a huge role in make the same foods exciting again.  I was excited to review this because I hoped it would help me fix a problem I have had with my youngest two.  They have been asking for lunchables.  They never really knew what these were until they saw the kids at school eating them.  Now these may look fun to a 5 and 7 year old, but they lack in nutrition.  I made some of their lunches with a luncheable feel.  I cut up cheese, cucumbers, bread, and cantaloupe.  I them put these in little containers of their lunch box and they got to build their own sandwiches and sides.  I had a little container of yogurt and peanut butter for the sandwiches.  They made cucumber and yogurt bites and peanut butter its.

This is the lunch Gabby made today with her cute pieces.  She is enjoying the fun of making your own combinations.

We  made pancakes and I let the kids cute up their own pancakes.  I love that this food cutter can be used by kids.  They won't cute themselves and they can have a ton of fun.

We don't do the cheese sticks.  I buy organic cheese and have to cut and slice myself. Here is a picture of the cheese that I sliced and then let my 8 year old cut into the pieces.  We then put the cheese squares in a air tight container and had ready for snacks and to throw in lunches.  She had a blast cutting these since mom never lets her use a knife, yet.

We cute all types of fruit, cheeses, breads, pancakes, and a few vegetables.  The cucumbers where easy and I loved how fast I chopped them for salads.

How does it work?
You have two pieces.  The mold that cuts the item is placed over your food and rocked back and forth.  Once you have went down to the cutting board you then use the smaller mold to push out the food.
These are preferred hand-wash but can be thrown in the dishwasher as well.  I have personally only hand-washed and have had no trouble with it.   My kids have enjoyed this and I am probably going to get the pink hearts mold as well.  I love to have fun with food and make healthy choices just as fun as the processed one.  Who needs lunchables when I can make my own healthier versions right at home and the kids still love it.  Whats better is that these molds are BPA FREE!  No toxic plastics touching your child's food!

You can chose the green square or pink hearts.  Right now you can get free shipping with code "back2school", up to $8 and good through 8/31!  See their Facebook page for more.

Reuseit Review Bento boxes

For most, summer break last until August although we start back in July.  We are year round schooling and I love it.  The kids get a relaxing 6 weeks off and then we are back in the swing of education.  Since we have about 3 weeks left of summer I am taking this time to review and try out better options to lunch containers and accessories.

I wanted to become a completely Eco friendly family in regard to our lunches.  This means no more plastic lunch bags, EPA free plastics, and other reusable items.  It is important for my children's lunch be nutritious and easy to access.  They like to have hot, cold, dry, wet, and creative lunches to look forward to every day, so that means options.

Creative lunches are important because when you pack your food everyday you want to have something to look forward to.  Reuseit has lots of Bento boxes to chose from.  I started with the Box Appetit Lunch Box.  Besides the typical cold lunches I wanted to have something sophisticated for some days.
Bento-style food containers are a perfect addition to a waste-free lunch. Removable containers and separators divide the space inside the box to let you pack different dishes in a single container with no baggies, wraps, or disposable packaging. By using reusable food and sauce containers, you can drastically reduce your need for use-and-toss plastic baggies, wraps, aluminum foil and juggling multiple food containers. Plus, you can save money and eat healthier by creating your own lunch instead of buying pre-packaged ones.~~Reuseit.
This style of Bento Box helps you to make hot and cold items without too many containers to carry.  This lunch was a Chicken Pita, salad, dressing, carrots, and fruit.  This was an all cool lunch that was kept sealed with no leaking.  The dressing was vinaigrette and I was impressed that the small container never leaked.  Because of the temperatures of summer I selected an all cold lunch.  My husband took this to work one day with a vegetarian baked Zitti, salad, and dressing.  The salad container was able to be removed so the Zitti could be heated in Microwave.  He said it was simple to remove the needed parts and put all back in when finished.  This container comes with a beautiful green fork that attaches for easy carrying.  My son has asked for this to be his lunch container.

Features of the Box Appetit Lunch Box~~Reuseit.
  • Eco-friendly – pack a lunch with no baggies, wraps, or disposable packaging
  • Sturdy design – large container with water tight seal lid
  • Glass-like lid doubles as a plate and dipping sauce tray
  • Durable fork with a deep curve for scooping and an angled edge for cutting
  • Microwavable and removable inner food container
  • Added clip on lid to hold fork (or your own chopsticks)
  • Lidded sauce pot perfect for dressings and condiments
  • Use this one box as a doggie bag and won't have to juggle different plastic containers
  • BPA free
  • Microwavable and dishwasher safe
The Box Appetit Lunch Box is valued at $21.95.

Nutrition in the school

Yesterday I had a wonderful opportunity to talk about nutrition in my sons classroom. We had a great time, and I enjoyed using a new visual aid called "choosemyplate.gov".
First Lady Obama has taken on Nutrition to be her theme of interest for this term. You can read more about this on Obama Foodorama.  She is making big changes in school lunch programs, you can see some of those changes at Bet
I have long thought the food pyramid to be a bit confusing when explaining it to others, and love the new "choose my plate". I thought this was an easier way to explain and have kids visualize their food choices.

We took each section and talked about what food are in each group, servings, creative ways to eat healthy, snacks, what is moderation, and digestion.  I had the kids each take turns making there own plates using the Felt food choices.

This was very successful and the kids all enjoyed asking questions and making their plates.  I think I will be using this aid for small children as well, since it is fun and visually easy to understand.

I made my own DIY felt board and purchased the felt cutouts at Felt Source.  This is a wonderful fun activity for kids of all ages.  If you want to explain healthy eating with your children, and have fun doing it, this is it.  Unfortunately, they enjoy it so much that we have it out all the time now.  I have my fingers crossed that we do not lose any of the felt foods.

I was touched by the wonderful thank you card the 4th grade class made me.  We had talked a little about heart health and beneficial foods.  Thank you Ms. Langdorf for allowing me the opportunity to share my passion.

I did stop by the school lunch room and briefly talk with the head of the lunch program.  She did mention that next year there are a few changes taking place.  Instead of a main and side of choice, kids will be given a main, a vegetable, and a fruit placed on every plate.  She was concerned with the amount of food that might be thrown away and wasted.  It is a real concern that I think about as well, because of this possible waste we pack our lunches.  I think that instead of possibly wasting food, we should be talking to kids about making good choices, like today.  It is their responsibly to learn to eat healthy giving them educational tools to help them learn this.  I was impressed with the "Raw Bar" and assortment of fruits and vegetables.  She said that the raw bar is always a huge hit with the kids, except the cauliflower.  I think a lot of kids have a little trouble with cauliflower :-)

What are your thoughts on some of the changes you can expect for next year school lunch programs?

Remember to visit Nourishing Interactive.  They are a fun website with lots of free printable pages, games, and educational resources. You can print these out for at home educational use.

What are your kids eating for Lunch?

I cannot believe summer is almost over and my little ones are heading off to school again. I want to let you know a few facts about our children and their nutrition. If you were looking to change their health now is the time. The American Dietetics Association reported that half of all children from ages 2 -18 years eat less than one serving of fruit per day.

This summer we had lunch at the kid’s cafeteria to get a felling of the nutrition at the school. The school has to feed many children and has to make it on a budget. We had a few lunches so I could see and taste the difference between the meals. Each meal I calculated to be between 2500-3000+ calories just for lunch. The meals varied between chicken, beef, and pastas. I could taste and see they used white flours and most items where fried. There was heavy sauces and canned foods. Now, I will say it is a great service to have food provided at the school for some individuals. I only wish they would get on board with nutrition today and not use hydrogenated oils, heavily processed foods, white flours, and sugar. Most of all I wish we could get fresh fruit and veggies. Now if they are not getting these nutritional dense foods at school where can they get them? From Mom or Dad.

Of course the best way to make sure they are getting a balanced diet is to pack the lunches yourself. This can be tricky at times, where kids can trade or throw away their food. I am not discouraging you, just preparing for picky eaters. Ask your kids what they are wanting in their lunch and make some healthy substitutes. Have them help you plan the meals so they have involvement and feel it is their lunch. You will have less rebellion when they understand.

So where do you start?
1. At home during dinners start with a few small portions of new items to see how they like it and ask if they would like it in their lunches. When they try something new in a smaller portion it is not overwhelming and gives them a chance to decide in a comfortable environment. Trying something new that does not agree with them will cause rebellion to home lunches.

2. Take your child shopping, let them pick out their fruits and vegetables, along with picking out a NEW item for the week. We are stimulated by the eyes with colors and textures. When they take ownership they tend to like items just because. If they do not like something the first time, do not get upset or quit. Try it in combination with other things, or make it differently, it may be a hit the second time around.

3. Allow your child or teen to help you cook dinner and lunches. When they feel accomplishment in creating something tasteful, they want to try more.

4. We mentioned making a menu together. Remind them it is a 3 or 4 day rotation. This allows for a diversity of nutrients while also reducing the chance of creating allergic reactions of foods. (Peanut butter, Turkey, Roast beef, chicken salad). This keeps things from getting stagnant and boring.

5. It can be very tempting to throw in junk foods every now and then. Try not to, you are making habits for life.

6. Get creative. This is the most important. I use wraps, large lettuce leaves, pitas, and breads. If it is always a sandwich is may not be as appetizing.

7. Be an example! This maybe hard at times but what better way to teach your children eating habits than with your nutritional diet. If your not doing it than they will not either.

Here is a few examples of great meals.

Breakfast: Yogurt, granola, Kashi (high fiber cereal lots of great tasting cereals), fruit, eggs (hard, poaches, omelets, scrambled), oatmeal, veggies omelets, mixed fruit, burros.

Lunches: sandwiches, mixed veggies, burros, chicken strips ( non fried), yogurt, beans and rice, stir fry's, fruits, wraps. Low-fat cheese sticks.

You get the idea. If your children does not like to eat vegetables, give them some dips to get use to the flavors of raw veggies. Ranch, hummus, yogurt and peanut butter dip, and more. Other great items to include are seeds, nuts, dried fruits (limited), crackers, rice cakes and brown rice. This is fun and gets them working towards healthy habits.

Also, remember to look on labels for ingredients. If any of the many names for sugar is listed in the first three ingredients, Move On! Stay away from enriched products of any flour. Even though it may not list enriched on package, look for it in the ingredients. Look for labels that say non-hydrogenated oil, too. This will reduce the chance of heart problems, and yes about 1 in 5 teens are now having cholesterol issues. Your deli meats should list no nitrates. Hormel is one of the companies you can find in most groceries that carry little preservatives. If you can get a organic no - preservatives lean meat that great!

Antioxidants rich foods are those of bright colors like orange, purple, blues, greens, and reds. These super foods reduce inflammation, reduce free radicals that break down tissue, and boast the immune system.

Have a Blessed and Healthy Day!
