Raw Almond Balls Recipe
2 1/2 cups shredded coconut, unsweetened
1 cup almond butter
1/2 cup raw honey
1 cup raisins
2 tsp cinnamon
1 1/2 cups almonds, ground into meal
shredded coconut, unsweetened for coating balls.
Add first 6 ingredients in a mixing bowl. Blend until all ingredients look combined. Form into balls in your palm. These can be same or large. I personally like to make mine about 1 1/2 inch balls so they are single servings. This way I don't just easily keep popping them in and forgetting to count them. I am not counting calories, but no need to waste them. :-) after you form your balls then coat them with the extra coconut. I keep pressing the coconut to the balls and reforming the ball shape over and over. Then place in refrigerator until cold. They store nicely in the frig for up to 10 days. I froze half my batch for later. When I took them out of the freezer they thawed nicely within 5 minutes and taste amazing still.

While these recipes are especially helpful for a mom and dads trying to get pregnant, moms carrying babies, it is also great for those wanting healthy options.
I find this to be a great source of protein, fiber, folate, good fats, and energy to power me back up after a hard run. It taste like a cookie to me, but has all great ingredients that my body needs. I love when a food taste like your cheating, but its totally good for you.
