Wondering what to do with the boiled eggs?

Are you wondering what to do with all those left over boiled eggs?  Well, you could start with eating them.  I am going to list a few egg-o-licious facts and give you a recipe all week to help you finish off those eggs.

At one time the American Heart Association claimed that eggs were hazardous due to Cholesterol.   Although a diet with without eggs is equally as hazardous.  Eggs are a complete source of protein and contains 14% more Lecthin than Cholesterol.  The Choline and Lecthin in eggs actually help to reduce HDL (High Density Lipoproteins) by breaking up cholesterol  and cleaning up the arteries.  Eggs contain Vitamins B1, B2, B5, B6, B12, Vitamin E, Magnesium, and Selenium. 

Eggs can help you slim down.  In a study, dieters who had eggs for breakfast achieved a 60 percent greater weightloss than those who began their day with a bagel of the same calorie count.  This is probably due to eggs having 13 percent of your daily protein needs and helps to keep appetite controlled.  Another thing to remember egg protein is easier for the body to absorb.  I am not a big meat eater by choice.  I know meat has it's benefits as well, but I like to balance my protein with rich grains and legumes.  Although one of my favorite choice muscle recovery for those hard or long workouts is a boiled egg.  Protein helps the body to recover from tears and repair the muscles. 

Eggs help your vision.  The yolks contains pigment lutein.  Lutein helps to prevent age related macular degeneration which happens to be one of the leading forms of blindness.  You can get lutein from spinach and other greens as well, so be sure to occasionally toss a sliced boiled egg over your salad!

Eggs also help to maintain bone strength.   Eggs are one of the few natural sources of bone building vitamin D. The amino acids in eggs (Cysteine, Methionine,and Cysteine) are shown to be extremely helpful for cell and tissue regeneration.  A healthy amount of Phosphorus found in eggs helps to replenish enamel of the teeth and outer surface of bones. 

Thinking of Detoxing after all the rich Easter sweets?  The intestines work with absorption and elimination processes of our food and its nutrients.  When you keep your digestive system healthy you keep other body systems healthy too, like you blood and lymph.  Increase supportive foods through the week such as Flax seeds, green leafy vegetables, fresh fruits, vegetables, yogurt, kefir, kombucha, and beans.  These can easily and tastefully be done in a convenient smoothy.  Also, drink plenty of water to help the body flush out the heavy amounts of processed sugars. 

Simple egg Sandwich                                                               
1 slice of whole grain bread
1 boiled egg sliced with yolk
1 green leaf lettuce
2 slices tomato

Cut bread in half, place slices of hard boiled egg, 2 slices of tomato, and leaf of lettuce in layers of sandwich. Then drizzle a little dressing over lettuce if desire.  Be sure to have a healthy antioxidant rich juice.  This can easily be a whole sandwich.  I was excited to have a simple sandwich, soup and fresh smoothy.

    1. We do also. My son though of an experiment. "Can you freeze a hard boiled egg". He thinks it will explode. We are going to test this out! :-)
