This is a very exciting topic for me and one that would take more than just one blog to truly cover correctly. It started in India were every selection of food and the preparation of that food is inseparable from health and treatment of disease. What that means is that they have always used food to treat themselves for disease.
Ayurveic means Life and science. (Ayur-Life and veda- science) There medical tradition dates back thousands of years and has continued today uninterrupted. They have practiced many forms of therapy from herbal medicine, surgeries, meditation, physical therapy and message, and many more. Ayurvedic physician have helped pave the way of practice for many areas of science. They have been using herbs in ways for blood pressure regulations, antibiotics, calm nerves, and much more. Many of the medications we take now, started as a herbal remedy an then PATENTED it to make it there own, and still using the synthetic form s of the original herb.
One thing to take in to account is the way Ayurveic medicine is used. The body is never separated from the MIND. When they look to remedy anything in the body they look at the whole body. So when they prepare the food they eat on a day to day bases, they look at the health they wish to obtain.
They use a system of the Dosha... TRIDOSHA. This is very difficult to explain and will take more time. I just wanted to give you an introduction to this amazing science of food. To break it down for you. They are taught the tridosha's from the beginning of birth. If you have a runny nose you add more drying foods. If its winter you add more herbs that are warming. If you have certain beans with the meal you add the peppers that will help to "fire" and fuel the digestion process.
I have mentioned one time before that my friends have been teaching me some of the meals, was very kind to write everything out for me to share with you. This happens to be my favorite meal, so far.
First I want to explain a little about some of the ingredients used in this dish.
Mustard seeds are a staple in most Indian dishes. They are warming to the body. As well as aid in digestion, and the discomforts of intestinal cramps and gas.
Turmeric is also very much used in Ayurveic meals. It is a anti-inflammatory, aids to detoxify the body, stimulated digestion, boost's the immunity, and aids in skin health.
Potato Dish
potato's 4 lbs- boiled
2 tbsp Olive Oil
1/2 tbsp mustard seeds
1/2 tbsp cumin seeds
1 tbsp urad daal
1 tbsp channa daal
1 cup yellow onions chopped
1/4 cup to 1/2 green chilies
1 tsp turmeric
1tsp sea salt
Boil the potato's and peel and cool.
Heat oil in pan, once oil is warm add mustard seeds and wait till it splutter, or pops.
Add cumin seeds, urad daal (white one) and channa daal ( yellow one). Let the seeds just barely brown stiring the whole time.
Then add choped 1 cup yellow onions and 1/4 cup green chilies.
Saute till onions are clear, then add turmeric and sea salt.
Add Mashed potato and stir in well. Add chopper cilantro as garnish.
I absolutely love this dish.
