Indian Mixed Vegetables Curry
1 red bell pepper, cubed
1/2 yellow onion, cubed
1 zucchini,cubed
1/2 large eggplant, cubed
6-8 large white mushrooms, 1/4 cuts
4 cups of water
1 cup cooked black beans
5 tbsp green curry paste recipe.
Tonight we are having it Burrito style!
I am using a nonstick wok, which works great for cooking vegetables without all the oil.
Once the vegetables are cooked down, I add in the green curry.
I add in 5 tbsp of green curry paste, the 4 cups of water, and continue to cook.
Add in your 1 cup of black beans and continue to cook about another 20 minute on a medium heat. Cook until all vegetables are tender and water is evaporated.
Remember this can be served over rice, as a burrito, or by itself.
This has Indian spices with help to add digestion. This is a medium heat curry, you can add more heat with some heat peppers.

I would love this but I don't think my husband would. He doesn't like to try new things.
