Coconut Oil
4 cups old fashion oats
1 cup whole wheat flour
1 tsp. ground cinnamon
1 egg plus 3 egg whites
1 cup applesauce
3 tbsp. raw honey
1 tsp. vanilla extract
1/2 cup chopped dried apricots
1/2 cup dried blueberries
1/4 cup raw almonds cut in slivers
(All ingredients are Organic and GMO Free)
Preheat oven to 350 degrees. Lightly oil a 11 X 8 baking sheet with coconut Oil. In a large bowl whisk together your oats, flour, and cinnamon. In a separate bowl whisk together the eggs. Then mix in the applesauce, honey, and vanilla. Mix this until smooth.
Then fold in wet mixture to the four mixture. Fold and mix until no more white flour can be noticed. Then fold in Apricots and blueberries. Then add mixture to baking dish and smooth out until even. Then sprinkle with almonds and bake for 25 to 30 minutes. Let cool and slice into bars, roughly 16 depending on portion size.
